Crunchy, simple Strawberry Vanilla Granola is based on my favorite Vanilla Granola recipe, but with pops of strawberries throughout! It’s a fun Spring or Summer spin on plain granola.

Vanilla Granola is great and all. But, I like variety. That’s why I’ve shared LOTS of granola recipes! Like:

I love granola. My daughter is also completely granola obsessed. She likes to eat a big bowl for a snack! Which is totally fine with me.
I haven’t shared a new recipe in a while, and I was thinking it was time to share a Spring or Summer granola flavor. So, why not something fruity?!
This Strawberry Vanilla Granola is quick, easy, and will leave you with addicting, crunchy granola clusters, with pops of strawberries throughout.
It’s a super flexible recipe too; so you can use different types of fruit too if you’d like. Keep reading, for some tips and other flavor ideas! No boring granola here 🙂
Let’s talk strawberry.
For this Strawberry Vanilla Granola, I like to use freeze dried strawberries. You can use them in whole pieces (like the pictures) or you can lightly chop or break the strawberries up for more strawberry flavor throughout your granola.
Alternatively, you can use dehydrated or dried strawberries. I have dehydrated my own strawberries before (tedious, but delicious!) and they would be wonderful in this recipe.
OTHER FRUIT
Of course, you can use whatever type of fruit you’d like really! Think:
- Freeze dried raspberries, blueberries, mangoes, apples
- Dried blueberries, cranberries, cherries, goji berries, and raisins
There’s tons of different options right now. I think Sprouts, King Soopers and Target have a great variety.
Look out for the sugar content in dried fruit though, if you are watching your sugar intake. I kept that in mind when making this recipe, so there is only 1 cup of strawberries sprinkled throughout.
If you’d like to use a little less, feel free to do so. Or, blend a couple fruits together. 1/2 a cup of strawberries and 1/2 cup of blueberries would be delicious. Mixed Berry Granola sounds great too!
OTHER OPTIONS
To make this Strawberry Vanilla Granola gluten-free, be sure to use certified gluten-free rolled oats.
This recipe is already dairy-free, with the use of coconut oil.
To make this granola vegan, simply use maple syrup instead of honey.
Homemade granola is a zillion times better than store bought (in my humble opinion!) and this Strawberry Vanilla Granola is such a fun flavor combo to try.

- 3 tbsp coconut oil
- 1/4 cup honey or maple syrup
- 1 tbsp vanilla
- 2 cups rolled oats (certified gluten-free)
- 1 cup chopped nuts (walnuts, almonds or pecans)
- 1 cup freeze dried strawberries

To begin, preheat your oven to 300 and line a large pan with parchment paper.

To a microwave-safe bowl, add your coconut oil and microwave till melted. Add your honey, whisk them together, and microwave again till the mixture is very warm (about 30-60 seconds). Add your vanilla and whisk it in.

To the same bowl, add your oats and nuts and stir till they are covered completely in the wet ingredients. Pour your granola onto your pan and spread it out into a thin, even layer. Bake in the oven for 25-30 minutes (or till the edges are golden). The granola will get crunchy as it cools.

After it's cool, break it up into pieces. Sprinkle your freeze dried strawberries over the top and mix them in.

Devour!
Stored in an airtight container, this granola tastes best within a couple months.
