Strawberry Vanilla Granola (gluten-free, dairy-free, vegan options)

Ingredients

  • 3 tbsp coconut oil
  • 1/4 cup honey or maple syrup
  • 1 tbsp vanilla
  • 2 cups rolled oats (certified gluten-free)
  • 1 cup chopped nuts (walnuts, almonds or pecans)
  • 1 cup freeze dried strawberries

Instructions

  1. To begin, preheat your oven to 300 and line a large pan with parchment paper.

  2. To a microwave-safe bowl, add your coconut oil and microwave till melted. Add your honey, whisk them together, and microwave again till the mixture is very warm (about 30-60 seconds). Add your vanilla and whisk it in.

  3. To the same bowl, add your oats and nuts and stir till they are covered completely in the wet ingredients. Pour your granola onto your pan and spread it out into a thin, even layer. Bake in the oven for 25-30 minutes (or till the edges are golden). The granola will get crunchy as it cools.

  4. After it's cool, break it up into pieces. Sprinkle your freeze dried strawberries over the top and mix them in.

  5. Devour!

Stored in an airtight container, this granola tastes best within a couple months.
