Have you ever made homemade cereal snack bars before?
Over the last few years I’ve seen one standard cereal snack bar recipe around the block: containing cheerios, peanut butter and honey. That’s all it takes for a delicious, homemade snack.
I’ve upped the bar though, since I wanted to make a gluten-free Cereal Snack Bar recipe that is healthier than the classic, but still with the delicious peanut butter and honey flavor combo!
Made with gluten-free Rice Krispie Cereal (I highly recommend this brand), certified gluten-free oats, walnuts, and ground flax seed, these Cereal Snack Bars are secretly loaded with healthy ingredients that you wouldn’t even know are there!
Your kids will taste peanut butter and honey.. and you? You, my friend, will too. These bars are one of my guilty pleasures… I could quickly eat half the pan! It might sound silly that these snack bars are so delicious, but these could also pass as a healthy, no bake Summer treat too!

Do I have to use Rice Krispie cereal?
No, you don’t need to use rice krispies, however I do prefer using them because they give the best texture. I prefer to use these.
I’ve also made these cereal snack bars with Chex and it was pretty good. If your family enjoys Cheerios, you could use those as well. Any cereal that’s light and smaller in shape should work.
Do I have to use peanut butter?
Definitely not. You can use whatever nut butter fits your hearts desire. Make sure the nut butter is creamy though, not too drippy, or the texture of these bars won’t be the same.
I haven’t used many other nut butters to make these cereal snack bars, because my family loves peanut butter. The combination of peanut butter and honey is heavenly.
However, I think cashew butter would also taste delicious in these. And almond butter, although more nutty, would make a great tasting bar too.
Do I have to use walnuts?
No, you can use whatever nut you prefer, however the texture of the nut may affect the outcome of the bar. For example, almonds are more crunchy so you would get a bar with more of a mixed texture, and you would be able to detect when you bit into an almond.
However, if you use a softer nut like walnuts or cashews, they will blend into the bars and you won’t get random harder bites of nuts.

- 1 1/2 cups gluten-free Rice Krispie cereal (I prefer Nature's Path Crispy Rice Cereal)
- 1/2 cup oats (certified gluten-free)
- 1/2 cup walnuts, finely chopped
- 1/4 cup flax seed, ground
- 1/2 cup peanut butter, creamy
- 1/2 cup honey
- 1 tsp vanilla
- 1/4 tsp salt
- 1/4 tsp cinnamon

To prepare, line a 9×9 pan with parchment paper.

To a large mixing bowl, add your rice krispies, oats, walnuts and flax seed.

To a microwave safe bowl, add your peanut butter and honey. Stir them together till they are entirely combined. Microwave in 20-30 second increments, stirring in between, till the mixture is hot. Add your vanilla, salt and cinnamon to the hot peanut butter honey mixture and stir till combined.

Pour your wet ingredients over your dry ingredients and stir till everything is well incorporated, and your dry ingredients are covered entirely by your wet ingredients.

Pour the mixture into your pan and press it down using a spatula into an even layer across your pan, with a smooth top.

Place in the fridge and let harden for at least one hour.

Remove from the pan, cut into 12 or 16 bars, and enjoy!
*Store these bars in your fridge and they will last about a week.

Every time I use your printing option, I select the “Larger” recipe option but the normal ingredients list prints instead. I’ve tried to switch to the larger ingredients list on mutliple recipes on your blog. None of the recipes will switch to printing a larger recipe size. Thought you would want to know so that you could address the problem. Thanks for sharing your recipes!
