Ingredients

Sugar Cookie Bars

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 4 oz cream cheese
  • 1 tbsp vanilla extract
  • 1/2 tsp almond extract
  • 1 egg
  • 1 1/2 cups gluten-free all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Vanilla Frosting

  • 6 tbsp butter
  • 1 1/2 cups powdered sugar
  • 1 1/2 tbsp milk
  • 1/2 tsp vanilla

Instructions

Sugar Cookie Bars

  1. To begin, preheat your oven to 350. Line a 9x9 pan with parchment paper (with two ends sticking out for easy removal).

  2. To a large mixing bowl, add your butter and sugar and beat them together with a mixer till creamy. Add your cream cheese, vanilla and almond extracts and beat together till smooth. Add your egg and briefly blend it in.

  3. To the same bowl, add your flour, baking powder and salt. Mix everything together till you have a thick, smooth batter.

  4. Add the batter to your pan and spread it out into a thin, even layer. (I recommend using a non-stick sprayed spatula to spread it easily.)

  5. Bake in the oven for 20-23 minutes, or till a toothpick inserted comes out clean. Let cool entirely before topping with frosting.

Vanilla Frosting

  1. To a mixing bowl, add your butter, powdered sugar, milk and vanilla extract. Beat with a mixer till creamy and smooth.

  2. Spread the frosting across the top of the bars. Top with sprinkles.

  3. Remove from pan and cut into 16 bars. Devour!

Recipe Notes

Stored in the fridge, these taste best within the first 3-4 days. Let them sit out to come to room temperature, or microwave briefly (8-10 seconds or so).
