No Bake Chocolate Peanut Butter Oatmeal Bars (gluten-free, dairy-free & vegan options)

Ingredients

Oatmeal Bars

  • 1/4 cup butter (or dairy-free butter alternative, for dairy-free/vegan)
  • 1/3 cup maple syrup (or honey, if not vegan)
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 3 cups oats (certified gluten-free)

Chocolate Topping

  • 3/4 cup chocolate chips (dairy-free)
  • 1/4 cup peanut butter

Instructions

  1. To begin, prepare a 9x9 pan with parchment paper, with two sides sticking out for easy removal.

  2. To a microwave safe bowl, add your butter, maple syrup, and peanut butter, and heat till your butter is melted, the mixture is warm, and stirs together smoothly. Add your coconut milk, vanilla and salt and whisk together again. Add your oats, and stir till all ingredients are well combined.

  3. Pour your oat mixture into your pan and press down into one thin, even layer. Place in the fridge for 30 minutes.

  4. To a microwave safe bowl, add your chocolate chips and peanut butter. Microwave in small increments, stirring in between, till your chocolate chips are entirely melted.

  5. Remove your oatmeal bars from the fridge and pour your chocolate topping on top. Spread it out into a thin, even layer across the top of your bars.

  6. Place your bars back in the fridge and let them chill for at least 30 minutes. Remove, cut into pieces, and devour!

Recipe Notes

Stored in an airtight container in the fridge these bars should last about a week.
