Oatmeal Chocolate Chip Cookies (gluten-free)

Ingredients

  • 1/2 cup coconut oil, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup gluten-free flour (I use Bob's all purpose 1-to-1 gluten-free flour)
  • 3/4 cup oats (certified gluten-free) *see notes
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350 and line two pans with parchment paper. 

  2. In a large mixing bowl, using a hand mixer, cream together your coconut oil and sugars for a couple minutes. Add your egg and vanilla and mix together again.

  3. To the same bowl, sprinkle in your flour, oats, baking soda, salt and cinnamon. Stir your cookie dough batter together till all is well incorporated. Add your chocolate chips and fold them into your batter. 

  4. Scoop the dough out onto both pans, and bake your cookies for 10-12 minutes, or till the edges are set. 

  5. Let them cool for a few minutes, and then devour!

Recipe Notes

*Be sure to use quick-cooking oats if you're at high altitude. *Stored in an airtight container, these cookies taste best within a week.
