There’s something magical about Fall mornings, isn’t there?

The crisp, fresh air, colorful leaves changing colors… it’s breathtaking. Around my house though, mornings don’t exactly look like that…. Here mornings are usually me flying around like a mad woman trying to feed the dog, both kids, myself… etc. I’m sure you have your busy mornings too, don’t you? Yes, I’m talking to YOU! 😉

So, how do you take bring the two together, and add a piece of the beauty of Fall to your crazy mornings? I’m glad you asked!

That part’s easy. Make these gluten-free Apple Cinnamon Waffles, of course! 😉

Waffles make any morning feel special, and these waffles are no exception to that. They’re filled with some of Fall’s best flavors so you can have a Fall party in your mouth, no matter what the day throws your way.

These waffles are gluten-free, sweetened naturally with honey or maple syrup, and have no butter or oil (using Greek yogurt instead!), making them a great healthy waffle recipe.

They’re crispy on the outside and fluffy on the inside with a little bit of chew thanks to the Greek yogurt. With specks of apples throughout, and the warmth of cinnamon and nutmeg, you can’t go wrong with these!

Let’s talk process to make these waffles first.

To begin, you’ll start by combining your dry ingredients into a small mixing bowl and stirring them together (flour, baking powder, salt, cinnamon and nutmeg).

Next, in a large mixing bowl, combine your Greek yogurt, milk, honey (or maple syrup), and vanilla and whisk them together till well combined.

Pour your dry ingredients into your wet ingredients and mix them well.

Now, add your eggs to a small bowl and whisk them – real good! 🙂 You want your eggs to be filled with bubbles and light and fluffy. So whip them up for a couple minutes.

Then gently fold your whipped eggs into your waffle batter. That is THE trick for fluffier waffles.

Lastly, add your apple and gently fold it into your waffle batter. Now, cook your waffle batter in your waffle maker, according to your waffle maker’s directions. I fill my waffle maker up about 2/3 way full each time, making about 3 1/2 full waffles.

And about ingredients…

Be sure to use a high quality gluten-free all purpose flour (with xantham gum) and high quality spices, or these waffles just won’t be the same.

I recommend using plain Greek yogurt (I prefer 2%) because it won’t have any extra added sugar or vanilla, and you can add your own accordingly. However, vanilla Greek yogurt will work in this recipe fine too (you may need to do only 1/4 teaspoon of vanilla extract then though).

In this recipe you can use skim, 2%, whole or almond milk. I typically use 2% if I’m making them for my family, and almond milk for myself (just a personal preference).

And, last but not least: apples! I recommend granny smith for the best tart apple flavor. But, gala and fuji work well too.

"maple

Lastly, I HIGHLY recommend topping these homemade waffles off with maple syrup.

The maple syrup ties into the apple, cinnamon and nutmeg flavors beautifully and I swear they taste ten million times more amazing with real maple syrup on top 😉
