Classic, homemade, gluten-free Chocolate Chip Cookies filled with vanilla ice cream in the middle make a fun Summer treat for kids or surprisingly easy birthday party dessert!

Have you ever made homemade Chocolate Chip Cookies before?

I feel like most people who have baked at least a couple times in their lives have probably made chocolate chip cookies! Whether they were pre-made or not, you’ve baked cookies! πŸ™‚

Now, have you ever scooped ice cream before?

Again, if you’re an adult (and you like ice cream…), chances are you’ve probably scooped some ice cream yourself at some point.

That’s all that’s required to make these homemade Chocolate Chip Cookie Ice Cream Sandwiches. These are seriously that easy.

These make such a fun Summer treat or a great birthday party dessert too! My son, who will be turning 4 soon, has decided that he wants a Chocolate Chip Cookie Ice Cream Sandwich for his birthday now! I guess I’ll be making these again soon.. darn πŸ˜‰

Let’s get to making some Chocolate Chip Cookie Ice Cream Sandwiches!

First, you start with my classic, gluten-free Chocolate Chip Cookie recipe.

The recipe itself is very simple: You’ll mix together your dry ingredients, cream your butter/coconut oil and sugars separately, add in the rest of your wet ingredients, and mix your wet and dry ingredients together. Fold in your chocolate chips and bake. Easy peasy! πŸ™‚

Your Chocolate Chip Cookies need to be cooled entirely before you start assembling the Ice Cream Cookie Sandwiches. Or else you may end up with broken cookies and melted ice cream!

Now, to begin assembling your ice cream sandwiches, look through your cookies and start matching pairs of cookies together that look similar in size and set them to the side, lined up in those pairs. You should end up with about 9-10 pairings of cookies (depending on how big of a cookie scoop you used to make the Chocolate Chip Cookies – I recommend using a small cookie scoop).

Take your ice cream out of the freezer (Bonus: use whatever flavor of ice cream you’d like!) and take out your first pairing of cookies. Set them out with bottom sides facing up.

Scoop the ice cream into a 1/4 cup measuring cup.

I actually preferred using a spoon to scoop it rather than an ice cream scoop. Remove the ice cream from the measuring cup and place it on top of one cookie. Place the other cookie on top to form the Ice Cream Cookie Sandwich.

Now, place the sandwich between the palms of your hands and gently twist the cookies back and forth in opposite directions of each other. This should encourage the ice cream to gently spread out in the middle, so you have ice cream from one edge of the cookie to the other, instead of just a large clump in the middle. This was my favorite way to easily maneuver the ice cream around without accidentally breaking a cookie – you may find your own favorite way!

You can run your finger around the edge of the ice cream, if you’d like to smooth out the edges. Or, leave it as is, with a little more rustic/homemade appearance! πŸ™‚

After your done, wrap your cookie in plastic wrap and place it in the freezer immediately. While this process isn’t hard, you will need to work quickly so your ice cream doesn’t start melting a little.

Now, repeat till you’ve stuffed every cookie with ice cream! YUM! πŸ™‚

Keep your Ice Cream Sandwiches all individually wrapper in the freezer, and I’d recommend putting them into a larger ziploc bag too if you’d like for them to keep even longer. These should last at least a couple months in the freezer stored this way.

Ingredients
  • 18 gluten-free Chocolate Chip Cookies, cooled entirely
  • 4 1/2 cups Ice Cream, vanilla (or other preferred flavor)

  7. Devour!
