Ingredients

  • 2 cups oats (certified gluten-free)
  • 2 cups nuts, chopped (almonds, walnuts, cashews)
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 2 tbsp coconut sugar (or white sugar)
  • 1 tsp vanilla
  • zest of 2 large lemons (or 3-4 small lemons)
  • 2 tbsp lemon juice (juice of 1 lemon)

Instructions

  1. Preheat your oven to 300 degrees and line a large baking pan with parchment paper.

  2. In a large mixing bowl, add your oats and nuts. Stir until well combined.

  3. In a medium sized pot, over medium heat, add your coconut oil, honey and sugar. Bring to a simmer, and remove from the heat (Alternatively you can heat your ingredients up in the microwave). Add in your vanilla, lemon zest and lemon juice.

  4. Pour the wet ingredients from your pot over the dry ingredients in your mixing bowl and stir until everything is blended well together.

  5. Spread out in a thin, even layer on your baking pan.

  6. Bake in the oven for 25-35 minutes, or till the edges are just starting to get a little color.

  7. While the granola is cooling it will get crunchy, so don't be worried if it comes out and doesn't look crunchy yet. Let it cool for about 30 minutes, and devour!
