Apple Cinnamon Waffles (gluten-free, made with Greek yogurt)

Ingredients

Dry Ingredients

  • 2 cups gluten free flour (I use Bobs Red Mill 1 to 1 all purpose flour)
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Wet Ingredients

  • 1 3/4 cup milk (I prefer 2% or almond milk)
  • 1/2 cup Greek yogurt (I use Fage 2%)
  • 2 tbsp honey or maple syrup
  • 1/2 tsp vanilla
  • 1/2 cup shredded or finely diced apple (1 apple - Granny smith, fuji or gala)
  • 2 eggs

Instructions

  1. In a small mixing bowl, stir together your dry ingredients (flour, baking powder, cinnamon, nutmeg, salt).

  2. In a large mixing bowl, whisk together your milk, Greek yogurt, honey, and vanilla.

  3. Add your dry ingredients into your wet ingredients and stir together till well combined.

  4. In a separate bowl, whisk your two eggs, for a couple minutes so they are nice and fluffy with bubbles. Then gently fold your eggs into your waffle batter. Add your apple and gently fold into the batter.

  5. Fill your waffle maker with about 1/2 cup of waffle batter (after spraying with non-stick spray!) and cook according to your waffle makers directions.

  6. Top with maple syrup and more apples, and devour!
